Saturday Morning Spinach Quiche

GET INSPIRED:
This morning is sure to be special with a homemade "Saturday Morning Spinach Quiche." So, throw a pretty table cloth on your kitchen table, snip some fresh flowers/greenery from your garden for a quick center piece and set your table too! Saturday mornings should be celebrated! Scribble a little hand written "I love you" note for your sweetie and place on their plate. :)

INGREDIENTS:
1 ready-to-use refrigerated pie crust (1/2 of 15-oz. pkg.)
1 1/2 cups shredded sharp cheddar cheese
1/2 cup mozzarella cheese
2 Tbsp. flour
1 pkg. (10 oz.) frozen chopped spinach, cooked, well drained
1 cup milk
2 eggs, beaten
3 slices bacon, cooked, crumbled
1/2 cup cubed ham
1/2 tsp. salt
Dash pepper

DIRECTIONS:
Heat oven to 350°F.
Toss cheese with flour in medium bowl. Add remaining ingredients and mix well. Pour into crust. Bake 1 hour or until knife inserted in center comes out clean.

SUGGESTIONS:
Serve with a side of fresh fruit (whatever you have on hand), a pretty glass of ice water and of course... coffee!

Creamy Chicken Squares


INGREDIENTS
1 package (3 oz) cream cheese, softened
1 tablespoon butter, softened
2 cups cubed cooked chicken
1 tablespoon chopped fresh chives or onion
1/2 cup shredded cheddar cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon milk
1 tablespoon chopped pepper (try banana peppers to add a zing)
1 can (8 oz) refrigerated crescent dinner rolls
4 thin slices of ham
1 tablespoon butter, melted
3/4 cup seasoned croutons, crushed

DIRECTIONS
Heat oven to 350°F. In medium bowl, mix cream cheese and 1 tablespoon softened butter; beat until smooth. Add chicken, chives and/or onion, cheddar cheese, salt, pepper, milk and peppers; mix well. Separate or cut dough into 4 rectangles. If using crescent dough, firmly press perforations to seal. Spoon 1/2 cup chicken mixture onto center of each rectangle. Lay a thin slice of ham on top of each rectangle. Pull 4 corners of dough to center of chicken mixture; twist firmly. Pinch edges to seal. Place on ungreased cookie sheet. Brush tops of sandwiches with 1 tablespoon melted butter; sprinkle with crushed croutons. 3 Bake 25 to 30 minutes or until golden brown.
